This is a book on properties of Lipase from a filamentous fungi Aspergillus sp. Lipase are hydrolyase enzyme that belongs to the large family of Esterase which hydrolysis triacylglycerides found in lipids. Strains of Aspergillus produced the protein with peak lipase activity under fermentation technique in certain preferred physiologic condition (s).
