Proteolytic enzymes are important enzymes having wide applications in industrial as well as pharmaceutical field and are generally isolated from animals, plants and microorganisms. The isolation, purification and characterization of new proteolytic enzymes bear considerable importance in the pharmaceutical and biochemical fields. A proteolytic enzyme has been isolated from the stem latex of Jackfruit (Artocarpus heterophyllus Lam.).
