The aim of characterization study of proteolytic enzymes of fungal strains isolated from Saharan soil is to produce and study the properties of the protease enzyme, produced by the yeast isolated from the Algerian desert soil of El Oued (Chatte) of Algeria. Four types of yeast were isolated, and these species were selected using a sterile milk agar treatment medium, with 5% casein. When the results obtained showed that four yeast strains have the ability to produce a protease for this substance.
