The objective of this review is to succeed in the study and the proposal of ways of valorization of the bio-residues of the saffron culture for a sustainable development of this sector.The objective of this review is to succeed in the study and the proposal of ways of valorization of the saffron by-products for a sustainable development of the saffron sector and the contribution to the international scientific knowledge in this field.In this sense, the main objectives of the present study are:- To valorize saffron by-products and to highlight its richness, by a phytochemical study;- To evaluate the antioxidant, antifungal,antibacterial, insecticidal and anti-mite potential of the phenolic extracts of Crocus sativus by-products.

Dr Si Mohamed Jadouali est chercheur au Laboratoire de Biotechnologie, Matériaux et Environnement, la Faculté des Sciences d¿Agadir, Université Ibn Zohr. Ses recherches portent sur la valorisation des produits naturels. Il a publié plus de 6 articles de revue à comité de lecture.
