This work is devoted to the analysis of four fundamental managerial functions in small fixed and mobile restaurants in BUTEMBO. We have analysed successively the following main functions of the managerial wheel: planning, organisation, direction (or command) and finally control. Management is indeed applied by the restaurant owners, despite their informal character. They use managerial concepts in a verbal manner, i.e. not supported by techniques. We found that this is the application of management to informality.
