Citrus aurantium var amara L. (C. aurantium), commonly known as bitter orange, or Seville orange, belonging to the Rutaceae family is one of the main horticultural crops having an important economic value for its essential oils, particularly neroli oil. This work represents a bibliographic synthesis on the secondary metabolites from sour orange (essential oils and organic extracts), their identification, their synthesis, the different techniques of extraction of these metabolites, in particular the extraction by supercritical fluid, as well as the previous works treating the biological powers of sour orange.
