Sandy, a registered dietitian nutritionist and long-time vegetarian, is passionate about the value of a plant-based lifestyle. This cookbook, which includes some of her personal bests as well as requested favorites from family and friends, are all simple to prepare yet delicious to eat. In addition to recipes, Sandy's scientific background enables her to share relevant nutritional information. A clinical dietitian at Aspen Valley Hospital for more than 30 years, Sandy has positively influenced her own hospital's food service. Sandy and team have developed vegan options for AVH staff and patients, resulting in the hospital receiving special recognition for the best hospital food in the nation. Outside the hospital, Sandy looks for new ways to share her healthy eating practices with family, friends and her community. She developed and teaches a class called "Leaning Toward a Plant-Based Diet." She regularly teaches healthy cooking classes. These classes, along with Aspen Meatless Monday events, are eagerly anticipated and well attended by members of the community. Always interested in food and cooking, Sandy earned a Bachelors of Science degree in Dietetics from Purdue University. Immediately after graduation, she headed west to Colorado to pursue her love of healthy cooking, eating and living. When not sharing the benefits of a plant-based diet, Sandy loves to ski and spend time outdoors. She hopes her enthusiasm for plant-based nutrition will resonate with you and inspire you to move towards a healthier lifestyle.
