Brazil is the world's largest producer of sugarcane and stands out in the production of its derivatives (sugar, ethanol and bioenergy). This is due to its vast production area, significant productivity and competitive operating costs compared to other producing countries. Other countries that are part of the sugarcane and sugar production scenario are: India, China, Thailand and Pakistan (SILVA, 2017). To perform the work, a literature review was conducted in order to describe, briefly, the general considerations about sugar cane, the main raw material for obtaining the sugar produced in Brazil. The main unit operations involved in the sugar production process are also presented in Chapter 2. Chapter 3 describes issues related to crystallization. The results of the tests are presented in Chapter 4, and in Chapter 5 the conclusion, where it was concluded through the physicochemical analyses that some analyses were out of specification.
