The Organic Quinoa Agribusiness Subsystem in Peru faces the challenge of adapting and/or redesigning itself to satisfy the new global consumers. This is why we will describe the innovations at the institutional, organizational, technological and commercial levels that took place in the COOPAIN CABANA PUNO cooperative, identifying the form of adaptation and organization of the supply system.
