Pectin is the important by-product obtained from fruit processing industrial wastes. Now a days the amount of fruit wastes were generated enormously, with the increase in production of processed fruit products. Disposal of these fruit wastes poses a problem, without disturbing the environmental sustainability and utilization of these fruit wastes can be efficiently handled by manufacturing useful by-products. Recovery of by-product from fruit wastes can improve the overall economics of processing units. Pectinases are group of related enzymes mainly Polygalacturonases, Pectin lyases and Pectinesterases. These are produced by many organisms using fruit waste. Pectinases have been considered for several commercial industrial processes, such as textile, plant fibre processing, treatment of industrial wastewater, containing pectin material. Production and optimization of pectinases using different kind of fruit waste and cultural conditions; and studies with their kinetics study are crucial role to understand enzyme performance. This book focuses on the biochemical characteristic of pectinases from yeasts using fruit waste and the performance of pectinase on pectin could be evaluated.
