From the nutritional point of view, peppers are generally considered as a balanced source of most of essential nutrients, high content of vitamins such as A, C and E, important antioxidants, rich in flavonoids and other phytochemicals. Sweet peppers are currently the object of much attention due to possible links to prevention of certain types of cancer, cardiovascular diseases, atherosclerosis, haemorrhage, delaying of ageing process, avoiding cholesterol, improving physical resistance and increasing appetite. Hence, Passive Refrigeration System is proposed as a profitable approach for the management of fresh produce to store for a long time, assuring their biochemical and nutritional characteristics.
