Sweet potato is one of the world's most important staple food whose nutritive value is very high. Quality processing of sweet potato holds an opportunity of creating markets for the tubers that are processed into chips, flour and a lot of confectioneries which encourage rural farmers to go into its production and invariably lead to increase in production, cost minimization and profit maximization. The book Sweet Potato Production and Processing in South-East Nigeria is an empirical study of actors involved in adoption of production and processing technologies of sweet potato for increasing household food security as well as raising standard of living of the stakeholders.
