Após um curso preparatório de literatura, um curso no Sciences Po Rennes e um mestrado 2 em gestão cultural no Paris Dauphine, Mahaut decidiu recorrer à produção no campo do espectáculo ao vivo, com um enfoque particular na dança. Actualmente é responsável pela produção para a companhia da coreógrafa Fabrice Lambert.
