Nowadays there is a growing demand for organic food which resulting from consumers' interests of the quality and safety aspects which characterize this kind of food and from its positive environmental impact. This growth of demand is expected to continue during the coming years, although the situation varies from one country to another in terms of type and quantity of production. This book pretends to address the demand and consumption state of organic food, both at the global level, as well as European and Spanish, also it aims to study the relevant legislation in the EU and the specificities of the Spanish legislation in the organic food sector.
