The first is a bibliographical review of the many interests and the chemical composition of Mentha piperata essential oil. The second involved determining the chemical composition of Mentha piperata oil. Analysis by gas chromatography (GC) and coupled gas chromatography-mass spectrometry (GC/MS) showed that menthol (41.81%), menthyl acetate (36.92%) and menthone (5.12%) are the main constituents of this extract. The third axis concerns the selective transformation of menthone in the essential oil of Mentha piperata into hydrazone whose wavelength at the absorption maximum by UV-visible spectrophotometric analysis is 356 nm.
