The purpose of this text is to discuss the gastronomic culture of one of Brazil's states, Acre. In view of its historical and geographical formation, the state of Acre, which belongs to the Northern Region of Brazil, has a peculiar identity in its gastronomy due to the miscegenation of the food cultures of the Brazilian Indians, the inhabitants of northeastern Brazil and the immigrants who populated the Brazilian Amazon.

Graduated in Law from the University of São Paulo -USP (1976); Graduated in Gastronomy from the Centro Acadêmico Nossa Senhora do Patrocinio -CEUNSP (2010); Post-graduate in Teaching in Higher Education and post-graduate in Brazilian Cuisine from SENAC; wine sommelier from ABS-SP and SENAC; university lecturer in Brazilian cuisine.
