Growing up on a family estate in rural Jamaica, I never realized nor appreciated what it was to have such beauty and abundance growing all around me. I can sit back on the verandah and reminisce about the days of my mother's and grandmother's past. As I look out to where we had so many coffee trees loaded with ripe coffee ready to be picked, I recall how much I hated picking coffee. I could not bear to touch the camouflage lizards that were on the limbs. They used to scare the daylights out of me. I can still hear the sound of my mother's and grandmother's voices shouting "go pick the coffee! go chum the coffee! go parch the coffee!" If the coffee is parched too light, it's not strong enough, parched too dark, you have burnt it! Now it is known as different roasts and flavors. After beating and brewing the coffee, you can have a cup of the best coffee in the world.
