The aim of this study was to check for adulteration and fraud in samples of pasteurised whole milk types A, B and C sold in the city of Assis-SP. 25 samples were analysed over 5 months. The following tests were carried out on all the samples: digital cryoscopy, density, pH, fat, acidity in °Dornic, and the lacto-sedimentation test. Of the 25 batches of milk analysed, only 12% met all the legal requirements. The lacto-sedimentation and cryoscopy determinations showed the greatest irregularities in the analyses carried out. The conclusion is that there is a need to improve quality control in the production of pasteurised milk consumed in the city of Assis - SP.
