The aim of this study was to check for adulteration and fraud in samples of pasteurised whole milk types A, B and C sold in the city of Assis-SP. 25 samples were analysed over 5 months. The following tests were carried out on all the samples: digital cryoscopy, density, pH, fat, acidity in °Dornic, and the lacto-sedimentation test. The results were compared to the standards of the legislation in force in Brazil, Normative Instruction No. 51 of 18 September 2002. Of the 25 batches of milk analysed, only 12% met all the legal requirements. The lacto-sedimentation and cryoscopy determinations showed the greatest irregularities in the analyses carried out. The conclusion is that there is a need to improve quality control in the production of pasteurised milk consumed in the city of Assis - SP.
