Vinyldithiins (or Vinyldithins) are one of the primary organosulfur phytochemicals formed in the breakdown of allicin in the oils of garlic (Allium sativum) or onion. In garlic supplements, vinyldithiins are only found in garlic oil macerates that are made by incubation of crushed garlic in oil. When a garlic clove is crushed, the enzyme alliinase is released that forms allicin. Allicin very quickly breaks down into organosulfur compounds. In the presence of oil or organic solvents, one of the compounds formed is vinyldithiin. Garlic cloves yield about 2,500-4,500 mcg of allicin per gram of when crushed.
