Dr Alcides Troncoso is head of the Department of Foodborne diseases at the Belgrano University, in Buenos Aires. Ms Rivas and Ramos Clausen are a PhD students at the Center for Food Safety, Faculty of Nutrition and Medical Sciences, University of Buenos Aires
