The book is a part of author's research for his Doctoral studies. It throws light on the complete pomegranate processing technology for preparation of value added products. The Pomegranate is considered as a Superfruit because of its antioxidant properties, however it is considered as the tedious fruit for processing. Here the major emphasis was given on exploitation and preparation of new world's novel products like Ready to Eat Arils, fresh juice and juice concentrate from pomegranate which have high nutraceutical value. The research also throws light on the modified atmosphere packaging of arils and it's storage behaviour. It also focuses on the use of antioxidants and surfactants for enhancing the shelf life of Ready to Eat arils. Similarly the use of natural organic substances like honey and nano based food grade products were also studied. The methods of juice extraction, clarification and preparation of juice concentrate from Bhagwa variety of pomegranate along with it's appraisal of physico-chemical characters were also evaluated with its packaging and storage. Also the pathological population were studied along with the economical aspects of the product.
