They are widely used in production of probiotics and functional food. Using EPR and NO-specific fluorescent probes we for the first time showed and characterized specific NO-synthase-derived way of NO production in Lactobacillus plantarum.Physiological functions of NO production in lactobacilli were outlined. Out data indicate involvement of microbial NO in bacterial stress response, thus allowing us to consider NO as the universal stress limiting and adaptation factor in organisms differing in the level of organization.
