One of the key health problems in under developed countries is malnutrition, particularly among young children. The formulae are the most highly regulated consumer food products on the market today and often the only source of nutrients for preterm and term infants. However, Legumes, malting cereal, rice, and date are the most important sources of food in under developing countries. Therefore, this investigation was aimed to achieve the following points: production several infant and child formulae in different forms (liquids; puree; powder and solid)to appropriate different ages using bottling, drum drying and cooking-extrusion processing methods; utilization cheaper availability locally good nutrient ingredients and improving of their nutritional quality by using inexpensive high protein, prebiotic and elemental ingredients. The products were produced under sanitary conditions and submitted to evaluation the physical, chemical, rheological, microbiological and sensory characteristics. Results confirmed that, the products are safe, gained acceptability of the panelists, compatible with the local taste habits and might be marketable at reasonable cost.
