Lizy M. Mathai was born in the beautiful, lush province of Kerala at the southern tip of India. Kerala is known as "God's own country," known for its abundance of spices and coconuts. It is no wonder many of her recipes call for unique combinations of spices and copious amounts of coconut milk! Cooking has been Lizy's passion since her youth in India, and this passion has endured. While family and career considerations motivated her travels around the world, the decades she spent living in Asia, Africa, and North America have enriched her culinary pedigree. Kerala Cuisine is a product of her mastery of family recipes and decades of experimenting with spices and flavours from around the world. Over the years and over many meals prepared for guests in her home, Lizy's friends and family have encouraged her to publish a recipe book and share her passion. She has worked tirelessly for several years to complete this passion project and is immensely proud of the outcome. Lizy has also been an educator in both public and private post-secondary institutions for many years. Her prior experience includes working as a business instructor, career counsellor, campus manager and accountant. She regularly volunteers in the community, church activities and other charitable organizations worldwide. Lizy has been blessed with a wonderful family, being happily married for 39 years, with three sons and three grandchildren.
