The development of industrial and artisanal activities as well as the excessive use of water and chemicals in the manufacture of finished products pose a threat to water quality because these effluents do not meet water quality standards, which could affect human health by causing serious Endocrine diseases (diabetes, hyperthyroidism, ...). In the leather industry, workers face prolonged and toxic exposure to sulphides, which poses serious health and environmental problems because of their untreated effluents. The scientific community has accumulated evidence of the link between these chronic diseases and the environment, air pollution, water, soil, the way we produce, living conditions and work. Several studies have been devoted to the analysis of the characterization and treatment of this type of waste by biological application or by physicochemical processes. Reactive oxygen species (ROS) are a specific feature of the pathogenesis of various diseases,. As a result, there is a growing interest in finding natural substances with antioxidant properties. Many medicinal plants contain a wide variety of antioxidants, which can play a major role in neutralizing free radicals.
