Natural dyes/colors have been used historically throughout the world. However, their use has decreased to a large extent due to the arrival of synthetic dyes. In view of the toxic effects like allergy, mutagenicity and carcinogenicity of some of the synthetic dyes, the use of natural dyes has once again gained the interest.
