Seeds form an important part of human diets and are usually regarded as good source of energy. Seeds have nutritive and calorific values, which make them important in the diet. The crude protein and fat content of the seed, as well as the vitamin A, C and the mineral composition have been reported. However, in depth studies on the industrial application of this novel seed oil especially in emulsion production has not gain attention by investors and industrialist. In this text, the production of stable emulsion from fluted pumpkin seed oil extracted with different solvents system was investigated and reported in order to provide useful information for nutritionists, emulsion producers and consumers on the possibility of producing stable emulsions from pumpkin seed oil.
