In food industry, the enzyme is being used for clarification of wines, fruit juices, and manufacture of instant tea, which helps to improve the food quality by reducing the antinutritional components. Tannase enzyme was used for the treatment of tannin-rich effluents in leather processing units or industries. In pharmaceutical industry, tannase is used for production of gallic acid which is an important substrate for propyl gallate and trimethoprim in the synthesis of malarial drugs.
