Serum albumin is the most abundant protein of blood plasma. It is a single subunit protein devoid of any prosthetic group. Its high solubility in water and stability at room temperature makes it a good model for the study of folding intermediates, aggregation and alpha to beta transition. Studies of approx. 150 years make this one of the most well understood protein. Many studies related to its structure have already been done on serum albumins, we have added here some new works. We believe, the works included here will add in understanding of its use as a biotechnological tool.
